Favorite low-fat, filling foods??? - low fat eggplant recipes

Help for a young girl trying to lose weight! What are your fave low-fat, filling and foods rich in carbohydrates, preferably in? I hate eggplant and peppers, but otherwise I'm not demanding - recipes are welcome!
